Ingredients (for 24 empanadas)Ingredients (for 24 empanadas)

  • 1 kg minced beef
  • 500 g chopped onion
  • 50 g pitted olives
  • 50 g raisins
  • 4 hard-boiled eggs
  • Oil, salt, ground cumin, sweet and hot paprika, honey
  • Empanada wrappers

Preparation

  1. Fry the onion in plenty of oil until translucent.
  2. Add the minced beef and cook over medium heat, seasoning until it turns reddish with a strong sweet-and-salty flavor (the cumin should be the dominant spice).
  3. Then reduce the heat to low and add halved or large chunks of olives, and raisins that have been soaked beforehand.
  4. Chop the hardboiled eggs and add them at the end, stirring well to combine everything.
  5. Allow to cool completely.
  6. Fill the empanada wrappers in a half-moon shape. They can be fried (traditionally in beef fat) or baked, brushed with beaten egg or milk. They are eaten fresh out of the oven or cold, even the next day, though they rarely last long.

Enjoy!
